Pasta with Roasted Vegetables and Bacon


  • ¾ cup finely grated Parmesan cheese (1 ½ ounces), plus more, shaved, for garnish
  • Coarse salt and freshly ground pepper
  • ½ head cauliflower, trimmed into 1 ½-inch florets (about 2 ½ cups)
  • 1 small onion, thinly sliced
  • 1 medium sweet potato, peeled and cut into ½-inch cubes
  • 2 ounces bacon, preferably slab, chopped
  • 2 tablespoons extra-virgin olive oil
  • + 2 more ingredients
    • ½ cup fresh flat-leaf parsley, coarsely chopped
    • 8 ounces orecchiette
