  • 1 garlic clove, minced
  • 1 cup (4 ounces) finely shredded Parmesan cheese, divided
  • 1 tablespoon chopped fresh sage
  • 1 teaspoon olive oil
  • 1 pound butternut squash, peeled, seeded, and shredded
  • 2 tablespoons pine nuts, toasted
  • 2 ½ cups water, divided
