Ingredients

  • 1 or 2 yellow summer squash
  • 1 zucchini
  • 1 red onion (large)
  • 3 carrots
  • 1 yellow pepper
  • 1 red pepper
  • 1 orange pepper
  • + 1 more ingredients
    • 1 teaspoon(s) up the following vegetables into the same size.

Mix 1/2 C. extra virgin olive oil, 3 T. Italian seasonings, and salt and pepper to taste. Pour over cut up vegetables and spread out on 1 or 2 cookie sheets.
