Patatas Bravas with Pimentón Sauce


  • 2 tablespoons extra-virgin olive oil plus more for frying
  • 1 small yellow onion (½ cup), chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon hot smoked Spanish paprika (such as Pimentón de La Vera Picante)
  • 1 tablespoon all-purpose flour
  • 2 pounds russet potatoes, peeled, cut into 1-inch cubes
  • 1 bay leaf

    • 1 tablespoon smoked Spanish paprika (such as Pimentón de La Vera Dulce)
    • Kosher salt, freshly ground pepper
