Pea Pancakes
Ingredients
- ¼ cup salted butter
- 4 scallions
- 2 tablespoons vegetable oil
- ¼ cup all-purpose flour
- 1 cup low-fat cottage cheese
- 3 large eggs
- 1 teaspoon kosher salt
