  • 1 teaspoon salt
  • 3 ½ cups water
  • 1 pound frozen baby peas
  • 1 4-oz boiling potato
  • 1 teaspoon olive oil
  • 1 tablespoon crème fraîche or sour cream
  • 2 medium shallots

Cook shallots in oil in a 3-quart heavy saucepan over moderate heat, stirring, until softened, about 2 minutes. Add potato and salt and cook, stirring, 2 minutes.
