Peach Almond Muffins
Ingredients
- ½ cup(s) sliced, toasted Almonds
- ¼ teaspoon(s) almond extract
- ½ teaspoon(s) vanilla
- ½ cup(s) vegetable oil
- 2 beaten eggs
- 2/3 cup(s) sugar
- ½ teaspoon(s) baking soda
- + 3 more ingredients

- ½ teaspoon(s) Salt
- 1 ½ cup(s) flour
- 1 can(s) sliced, drained peaches or 1 ½ cups fresh peaches (16 ounce can)
I like to dice the peaches. Combine all dry ingredients. Add all wet ingredients until moistened. Spoon batter into greased muffin pan or use paper baking cups in a muffin pan, filling 2/3 full. Bake at 350°F for 20 minutes or until done. Makes 12.
