Peach Almond Muffins

Ingredients

  • ½ cup(s) sliced, toasted Almonds
  • ¼ teaspoon(s) almond extract
  • ½ teaspoon(s) vanilla
  • ½ cup(s) vegetable oil
  • 2 beaten eggs
  • 2/3 cup(s) sugar
  • ½ teaspoon(s) baking soda
  • + 3 more ingredients
    • ½ teaspoon(s) Salt
    • 1 ½ cup(s) flour
    • 1 can(s) sliced, drained peaches or 1 ½ cups fresh peaches (16 ounce can)

I like to dice the peaches. Combine all dry ingredients. Add all wet ingredients until moistened. Spoon batter into greased muffin pan or use paper baking cups in a muffin pan, filling 2/3 full. Bake at 350°F for 20 minutes or until done. Makes 12.
