Ingredients

  • ½ cup balsamic vinegar
  • 3 large eggs
  • 2 large peaches (about 1 pound)
  • ½ teaspoon vanilla extract
  • 3 8-ounce packages mascarpone cheese
  • 3 tablespoons all purpose flour
  • 1/3 cup sugar
  • + 4 more ingredients
    • ½ cup peaches
    • 5 tablespoons unsalted butter
    • 1 cup sugar
    • 7 whole graham crackers

Preheat oven to 350°F. Blend graham cracker pieces, sugar, and butter in processor until moist clumps form. Press onto bottom (not sides) of 9-inch-diameter springform pan.
