Peach and Spinach Salad


  • Honey Cider Dressing:
  • 1 T Dijon-style mustard
  • 2 T honey
  • 2 T extra-virgin olive oil
  • 2 T apple cider vinegar
  • Kosher salt, to taste
  • Salad:
  • + 4 more ingredients
    • 2 ripe peaches, halved, pitted and thinly sliced
    • 8 c fresh spinach leaves
    • ½ c pecan halves, toasted (see NOTE)
    • ½ c crumbled feta, blue cheese, gorgonzola or goat cheese
