Peach Chutney

Ingredients

  • 2 cup(s) fresh or frozen sliced peaches
  • ¼ cup(s) brown sugar, packed
  • ½ teaspoon(s) crushed red pepper
  • 1/8 teaspoon(s) freshly ground ginger root
  • 1 clove(s) garlic, minced
  • ¼ cup(s) onion, diced
  • ¼ cup(s) dried cranberries
  • + 5 more ingredients
    • ¼ cup(s) golden raisins
    • ¼ cup(s) dark raisins
    • 1/3 cup(s) apple cider vinegar
    • salt to taste
    • 1 teaspoon(s) fresh lemon juice

Combine all ingredients in a heavy 2 quart sauce pan. Bring to a full boil, then turn down heat and simmer for 45-50 minutes, stirring occasionally, until thickened. Cool completely. Refrigerate for 2-3 hours before serving. Makes about 1 1/2 to 2 cups.
