Peach, Pluot & Roasted Vegetable Salad Recipe

Ingredients

  • 2 sprigs fresh thyme, finely chopped
  • 4 oz feta cheese, crumbled
  • 2 plouts or plums, diced
  • 1 peach , diced
  • 1 tsp balsamic vinegar
  • 1 cup rye berries (or grain of your choice), prepared according to package directions
  • salt and black pepper , to taste
  • + 3 more ingredients
    • 2 tbsp olive oil, divided
    • 2 large carrots
    • 3 medium golden beets

1. Preheat oven to 400 degrees. 2. Peel and cut the beets and carrots into 1-inch pieces. Toss with 1 tbsp olive oil, salt and pepper.
