Pear Croustade with Hazelnut-Brown Sugar Topping

Ingredients

  • 1/3 cup sugar
  • 5 tablespoons golden brown sugar
  • ½ teaspoon salt
  • 1 ¾ pounds ripe Barlett pears
  • 1/3 cup hazelnuts
  • Vanilla ice cream
  • 2/3 cup bread flour
  • + 9 more ingredients
    • ½ cup all purpose flour
    • 3 tablespoons unsalted butter
    • 1 salt
    • 3 tablespoons golden brown sugar
    • 3 tablespoons water
    • 1 tablespoon all purpose flour
    • 1 cup all purpose flour
    • 2/3 cup hazelnuts
    • 9 tablespoons unsalted butter

Blend all ingredients in processor until clumps form, about 1 minute. Transfer to medium bowl. Cover and chill. (Do not clean processor bowl.)
