Pear Fritters with Lemon and Ginger

  • 1 cup whole milk
  • 1-½ cups plus 1 Tbs. granulated sugar
  • 3 large egg whites
  • ½ tsp. finely grated lemon zest
  • 2 tsp. plus 1/8 tsp. ground cinnamon
  • 2 to 2-½ cups canola oil
  • 2 small firm-ripe pears (preferably Bartlett), peeled, cored, and finely diced
  • + 3 more ingredients
    • 1 tsp. pure vanilla extract
    • 1 Tbs. finely grated fresh ginger
    • 6-¾ oz. (1-½ cups) unbleached all-purpose flour
