Ingredients

  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 3 tablespoons hazelnuts
  • 1 stand mixer fitted with paddle attachment
  • 1/3 cup milk
  • 1 ½ cups all-purpose flour
  • 1 large egg yolk
  • + 10 more ingredients
    • ½ teaspoon vanilla
    • ½ teaspoon cinnamon
    • 1 teaspoon sugar
    • 7 tablespoons unsalted butter
    • ¼ cup dark brown sugar
    • 1 9- to 9 1/2-inch (24-cm) springform pan
    • 1 whole large egg
    • 3 firm-ripe Bosc pears
    • 2 tablespoons plain fine dry bread crumbs
    • 1 ½ teaspoons active dry yeast

Stir together milk and 1 teaspoon granulated sugar in bowl of mixer. Sprinkle yeast over mixture and let stand until foamy, about 5 minutes.
