Ingredients

  • Cooking spray
  • ¾ cup packed dark brown sugar
  • 1 ½ tablespoons buttermilk
  • ½ teaspoon fresh lemon juice
  • 1 large egg, lightly beaten
  • 2 cups all-purpose flour (about 9 ounces)
  • ¼ teaspoon ground allspice
  • + 15 more ingredients
    • ¼ teaspoon ground ginger
    • ½ teaspoon salt
    • 1 cup granulated sugar
    • Glaze:
    • 1 tablespoon water
    • 3 cups sliced peeled Bosc pears (about 3 pears)
    • 2 tablespoons butter
    • 1 teaspoon vanilla extract
    • Cake:
    • ¼ teaspoon ground cinnamon
    • 5 tablespoons butter, softened
    • ½ teaspoon ground nutmeg
    • ¾ cup buttermilk
    • ½ teaspoon instant coffee granules
    • ½ teaspoon baking powder

Preheat oven to 350°.To prepare cake, arrange pear slices spokelike in bottom of a 9-inch cake pan coated with cooking spray, working from the center of the pan to the edge.Lightly spoon flour into dry measuring cups; level with a knife.
