Peas with Roasted Onions and Mint


  • 2 medium onions, cut into ¼-inch-thick rounds, separated into rings
  • 1 tablespoon olive oil
  • ½ teaspoon coarse kosher salt
  • 3 cups water
  • 4 cups frozen petite peas (about 20 ounces)
  • ¼ cup finely chopped fresh mint
  • ½ teaspoon ground black pepper
