Ingredients

  • Parmigiano-Reggiano(shavings or finely grated )
  • 2 tablespoons olive oil
  • 1 pound penne rigate
  • 1 teaspoon sugar
  • 6 ounces thinly sliced fine-quality prosciutto, such as Prosciutto di Parma)
  • 2 28-ounce cans Italian plum tomatoes in juice
  • 2 garlic cloves
  • + 1 more ingredients
    • 1 large red onion

Heat oil in a wide heavy medium pot over medium-high heat until it shimmers, then sauté onion until golden, about 10 minutes. Add garlic and sauté until golden, about 1 minute.
