Peppered Cornish Hens and Asparagus with Lemon and Marjoram

Ingredients

  • 1 pound asparagus
  • 2 teaspoons fresh-ground black pepper
  • 2 Cornish hens (about 1 1/4 pounds each), halved
  • ¾ teaspoon salt
  • 1 tablespoon fresh marjoram, or 1 1/2 teaspoons dried marjoram
  • 6 tablespoons olive oil
  • ¼ cup lemon juice (from about 1 lemon)

1. Light the grill. In a small glass or stainless-steel bowl, combine the oil with the lemon juice, salt, pepper, and marjoram. Put the hens in a glass dish or stainless-steel pan.
