Ingredients

  • 6 tablespoons sugar
  • 1 tablespoon whipping cream
  • 1 cup all purpose flour
  • ½ cup water
  • 1 1/3 cups heavy whipping cream
  • ½ cup crème fraîche or sour cream
  • fresh mint leaves

    • 8 tablespoons unsalted butter
    • 2 teaspoons light corn syrup
    • ½ cup whole milk
    • 4 large eggs
    • 2 ounces bittersweet (not unsweetened) or semisweet chocolate
    • 3 tablespoons sliced almonds
    • ¼ teaspoon salt
    • 1 tablespoon sugar
    • 40 fresh mint leaves
    • ¼ teaspoon peppermint extract

Position rack in center of oven and preheat to 425°F. Using 8-inch round cake pan bottom as guide, draw 8-inch circle on piece of parchment paper; turn paper over and place on baking sheet.
