Pepperoni Cheddar Straws


  • a pinch of cayenne
  • 1 pound extra-sharp Cheddar, grated (about 3 ¾ cups)
  • a 2 ½-ounce package sliced pepperoni
  • 5 to 6 tablespoons ice water
  • 1 stick (½ cup) unsalted butter, cut into bits
  • 1 teaspoon salt
  • 2 cups all-purpose flour
