Pepperoni Potato Bake


  • ¼ cup olive oil
  • 185 g pepperoni, chopped
  • 1 kg potato, cut into large cubes
  • 2 onions, sliced

1 Heat oil & add pepperoni, cook for 1 minute. 2 Add remaining ingredients and cook stirring occasionally for 5 minutes. 3 Turn heat to low & simmer covered for approx 30 mins or until potatoes are tender. 4 Turn heat to high and toss potatoes around for a few minutes to crisp.
