Petite Crème Citrus Bread Pudding with Passionfruit Caramel Sauce

Ingredients

  • Fresh thyme sprigs (optional)
  • ¼ cup fresh lemon juice
  • Pudding:
  • 1 cup passionfruit puree
  • 1 ¾ cups sugar
  • 8 large egg whites
  • 1 tablespoon grated lemon rind
  • + 8 more ingredients
    • 2 cups fresh orange juice
    • Sauce:
    • Cooking spray
    • 1 teaspoon dried thyme
    • 5 cups (1-inch) cubed French bread
    • 1 tablespoon grated lime rind
    • 1/3 cup fresh orange juice
    • 6 (1-ounce) slices petite crème cheese or Brie cheese

To prepare pudding, combine first 6 ingredients in a large bowl, stirring with a whisk. Stir in bread cubes.
