  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • Salt and pepper
  • ½ red onion, sliced
  • ¼ cup red wine vinegar
  • 2 pounds green beans, trimmed

Bring a pot of salted water to a boil. Add beans and cook until crisp-tender, 4 minutes. Drain; pat dry. In a bowl, toss beans with vinegar, onion, salt and pepper; chill for 45 minutes. Toss with herbs and olive oil. Cover; chill for 4 hours, stirring often.
