Pickled Onion and Monterey Jack Quesadillas

Ingredients

  • ½ teaspoon cumin seeds
  • ½ teaspoon salt
  • 8 7-inch flour tortillas
  • 2 cups grated Monterey Jack
  • fresh coriander sprigs
  • dried hot red pepper flakes
  • 2 small red onions

    • 2/3 cup cider vinegar
    • 4 garlic cloves
    • ½ teaspoon whole black peppercorns
    • ½ teaspoon coriander seeds
