Pickled Radishes and Green Beans

  • 1 tablespoon kosher salt
  • 5 peeled and smashed garlic cloves
  • 1 lemon
  • 2 tablespoons sugar
  • 2 cups white vinegar
  • 1 pound trimmed radishes
  • ½ cup water
  • + 2 more ingredients
    • ½ pound trimmed green beans
    • 2 teaspoons whole black peppercorns

In a saucepan, combine white vinegar, water, sugar, black peppercorns, garlic cloves, and salt and bring to a boil. Remove from heat and let sit for 15 minutes. Meanwhile, combine radishes, green beans, and the zest of 1 lemon in a large bowl. Add the vinegar mixture and let sit 15 minutes. Serve...
