Pine Nut-and-Rice Pilaf

Ingredients

  • 4 garlic cloves, minced
  • Basil sprig (optional)
  • ½ teaspoon salt
  • 1/3 cup pine nuts, toasted
  • 1 ½ cups chopped onion
  • ¼ teaspoon pepper
  • 1/3 cup chopped fresh basil
  • + 4 more ingredients
    • 4 garlic cloves, minced
    • 1/3 cup chopped fresh basil
    • 5 cups hot cooked rice
    • 2 teaspoons olive oil

Heat olive oil in a large nonstick skillet over medium heat. Add onion and garlic, and sauté 3 minutes or until tender. Combine onion mixture, rice, and remaining ingredients in a bowl; toss well. Garnish with a basil sprig, if desired.
