Ingredients

  • 3 tablespoons semolina (sometimes called semolina flour)
  • 1 teaspoon sugar
  • 1 tablespoon whole milk
  • 8 tablespoons unsalted butter
  • vanilla ice cream
  • 1 tablespoon unsalted butter
  • 5 tablespoons water
  • + 5 more ingredients
    • ¼ teaspoon cinnamon
    • teaspoon salt
    • 1 ½ cups all-purpose flour
    • 1 4-pound fresh pineapple (preferably labeled extra-sweet)
    • 3 tablespoons sugar

Blend together flour, salt, sugar, and butter with your fingertips or a pastry blender (or pulse in a food processor) just until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
