  • 3 tablespoons unsalted butter
  • 2 tablespoons sugar
  • 1/8 teaspoon cream of tartar
  • 2 large egg whites
  • 1 tablespoon fresh lemon juice
  • 1 large egg
  • ¼ cup sugar

    • ¾ cup salted macadamia nuts
    • 1 offset metal spatula

    • 12 (2- to 2 1/2-inch) metal pie plates or a mini-muffin pan with 12 (1/8-cup) cups
