  • 2 tablespoons shallots
  • 3 ounces lowfat soft goat cheese
  • ½ teaspoon fresh thyme
  • 1 scallion (white part only)
  • 1 can piquillo peppers
  • 1 teaspoon fresh parsley
  • Olive oil cooking spray
