  • 3 pitas
  • 5 ounces crumbled feta
  • 1 cup cucumber, peeled, seeded and diced
  • 1 tablespoon chopped mint
  • ½ red onion, thinly sliced
  • 1 tablespoon chopped parsley
  • 1 cup baby spinach
  • + 5 more ingredients
    • 2 stalks celery, thinly sliced
    • Salt and pepper
    • 1 cup frozen peas, defrosted, drained and patted dry
    • ¼ cup lemon juice
    • 1/3 cup plus 1 Tbsp. extra-virgin olive oil
