Ingredients

  • ¼ teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter
  • Plantains:
  • 2 cups (1-inch-thick) slices soft black plantains (about 1 pound), divided
  • Cooking spray
  • 2 teaspoons vegetable oil, divided
  • + 7 more ingredients
    • ¾ cup water
    • Sauce:
    • ¾ cup sugar
    • 2 teaspoons grated lime rind
    • ¾ cup water
    • 1 tablespoon butter
    • ¾ cup sherry or balsamic vinegar

To prepare plantains, heat 1 teaspoon oil in a medium skillet coated with cooking spray over medium heat. Add 1 cup plantains; cook 2 minutes on each side or until golden brown.
