  • 18 tablespoons unsalted butter
  • 1 teaspoon fresh lemon zest
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 3 ¾ pounds small plums (preferably prune plums)
  • 1 cup sugar
  • + 5 more ingredients
    • crème frâiche or lightly sweetened sour cream
    • 2 9-inch tart pans with removable bottoms
    • ½ cup sugar
    • 1 teaspoon salt
    • 3 cups all-purpose flour

Combine flour, butter, sugar, salt, and zest in a food processor and pulse until most of mixture resembles coarse meal with remainder in small (roughly pea-size) lumps.
