Plum-Watercress Salad with Manchego Cheese


  • 1 bunch(es) watercress
  • 0.25 cup(s) roasted almonds
  • 1 head(s) bibb lettuce
  • 2 tablespoon(s) extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • 2 ounce(s) Manchego cheese
  • 1 large plum-halved

    • 1.5 tablespoon(s) balsamic vinegar

In a large bowl, whisk the olive oil with the balsamic vinegar. Add the lettuce, watercress, almonds, plum and Manchego. Season with salt and pepper and toss gently to coat.
