Poached Pears with Spiced Caramel Sauce

Ingredients

  • 8 cups water
  • 1 ½ cups heavy cream
  • 6 firm-ripe Anjou pears
  • 1 whole clove
  • 2 cups granulated sugar
  • ¼ teaspoon black peppercorns
  • ¼ cup light brown sugar
  • + 7 more ingredients
    • ¼ teaspoon fennel seeds
    • 5 cardamom pods
    • 1 lemon
    • 3 tablespoons chopped almonds or hazelnuts
    • 2 cinnamon sticks
    • ½ cup granulated sugar
    • 4 juice oranges

Remove zest of oranges in strips with a vegetable peeler and cut away any white pith from strips.
