  • 1 teaspoon grated lemon rind
  • 1 ½ cups granulated sugar
  • ¼ cup (2 ounces) block-style fat-free cream cheese, chilled
  • 1 ½ cups powdered sugar

    • 2 tablespoons butter or stick margarine, chilled
    • 1 tablespoon grated lemon rind
    • 1 ½ teaspoons baking powder
    • 1/8 teaspoon salt
    • 3 large eggs

    • Cooking spray
