Portabellas Stuffed with Blue Cheese

  • 2-½ oz. fresh spinach leaves, washed and coarsely chopped (4 cups loosely packed)
  • Kosher salt and freshly ground black pepper
  • 1 large onion, sliced
  • 2 oz. blue cheese
  • 3 cloves garlic, minced
  • 4 Tbs. olive oil
  • 1 cup port
  • + 2 more ingredients
    • 1 Tbs. chopped fresh thyme
    • 4 medium-size fresh portabellas (stems removed), wiped clean

Heat 2 Tbs. of the oil in a large skillet until moderately hot. Add the onion and cook until soft and lightly browned, about 15 minutes.
