Ingredients

  • ¾ teaspoon salt
  • 2/3 cup water
  • 1 medium onion
  • 1 cup buttermilk
  • ¼ teaspoon black pepper
  • 12 10- by 2-inch strips of parchment paper
  • 6 tablespoons unsalted butter

    • 1 nonstick muffin tin with 6 (1-cup) muffin cups
    • ¾ cup fresh bread crumbs
    • 2 pounds large boiling potatoes
    • 1 large head leafy green cabbage
    • 1 teaspoon minced garlic
    • 2 tablespoons bottled horseradish
    • 3 ounces extra-sharp white Cheddar, coarsely grated
    • Irish bacon
    • 1 tablespoon vegetable oil
