Potato-and-Cheese Biscuits
Ingredients
- 2 tablespoons chilled butter or stick margarine, cut into small pieces
- 1 tablespoon cold water
- ¼ teaspoon salt
- 1 large egg white, lightly beaten
- ¼ cup minced green onions
- ½ cup plus 1 tablespoon low-fat buttermilk
- ¾ cup (3 ounces) shredded reduced-fat sharp cheddar cheese

Preheat oven to 425°. Cook the potato in boiling water 15 minutes or until very tender. Drain well; mash potato, and cool. Lightly spoon flour into dry measuring cups; level with a knife.
