Potato and Parmesan Salad

Ingredients

• ½ cup(s) fresh parmesan cheese, coarsely grated
• 3 teaspoon(s) Dijon mustard
• 2 pound(s) Yukon Gold potatoes, cut into fourths
• ¾ teaspoon(s) dried thyme
• fresh thyme sprigs and leaves for garnish
• 1 teaspoon(s) salt
• 2 tablespoon(s) fresh lemon juice

• • ½ cup(s) mayonnaise (light)
  • ½ cup(s) red onion, finely diced
  • 3 celery stalks, diced
