  • 2 pounds Granny Smith apples (unpeeled), cut into 1/8-inch slices
  • 2 pounds baking potatoes, peeled and cut into 1/8-inch slices
  • 1 tablespoon fresh thyme leaves
  • 1 pound Swiss cheese, shredded
  • 3 eggs
  • 3 cups buttermilk
  • 1/8 teaspoon freshly ground pepper
  • + 2 more ingredients
    • 2 teaspoons kosher salt
    • ¼ pound Parmesan, grated

Heat oven to 400° F. Coat a 3 1/2-quart casserole with cooking spray. In a medium bowl, whisk together the eggs, buttermilk, thyme, salt, and pepper; set aside.
