Potato Gnocchi with Lemon-Thyme Sauce

Ingredients

  • Cooking spray
  • 1 gallon water
  • 1 tablespoon grated lemon rind
  • 2 tablespoons shaved fresh Parmigiano-Reggiano cheese
  • 1 ¾ teaspoons kosher salt, divided
  • 2.5 ounces all-purpose flour (about 1/2 cup plus 1 tablespoon)
  • 2 teaspoons chopped fresh thyme
  • + 7 more ingredients
    • 2 teaspoons fresh lemon juice
    • ½ cup finely chopped shallots
    • Dash of kosher salt
    • 2 (10-ounce) baking potatoes
    • ¼ teaspoon freshly ground black pepper
    • 4 teaspoons butter
    • 4 teaspoons extra-virgin olive oil

1. Preheat oven to 400°. 2. Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool slightly. Peel potatoes; discard peels.
