Potato-Gorgonzola Gratin

Ingredients

  • ¾ cup (3 ounces) crumbled Gorgonzola or other blue cheese
  • Cooking spray
  • 1/3 cup (1 1/2 ounces) grated Parmigiano-Reggiano cheese
  • 2 ½ tablespoons all-purpose flour
  • 1 teaspoon chopped fresh thyme
  • ¼ teaspoon freshly ground black pepper
  • 2 ½ cups fat-free milk
  • + 3 more ingredients
    • 2 tablespoons butter
    • 1 ½ teaspoons salt
    • 3 pounds baking potatoes, peeled and cut into 1/8-inch-thick slices

Preheat oven to 375°. Melt butter in a small saucepan over medium-high heat. Add flour, and cook 2 minutes, stirring constantly with a whisk. Stir in the thyme.
