Potato "Lasagna"
Ingredients
- 4 pounds Idaho potatoes (about 4 large potatoes), peeled and cut into 1/8-inch slices
- 1 egg
- ½ teaspoon dried oregano
- 1 28-ounce can whole tomatoes, drained and roughly chopped
- 4 ounces Swiss, Cheddar, or mozzarella, shredded
- 1 ½ cups milk
- 2 teaspoons kosher salt

- ¼ pound bacon (about 5 slices), cut into 1/4-inch pieces
- 1 medium onion, thinly sliced
- 1 10-ounce package frozen spinach, defrosted and squeezed dry
