  • 1 bunch chives, finely chopped
  • Vegetable, canola, or peanut oil, for frying
  • Olive oil
  • 2 ½ pounds peeled Idaho potatoes
  • 4 teaspoons kosher salt
  • 3 tablespoons cumin, toasted
  • 1 cup quinoa
