Potato Salad with Red Onion, Feta and Capers

Ingredients

  • ¾ pounds, 2-⅛ ounces, weight New Potatoes
  • 1 whole Red Pepper
  • 1 whole Red Onion
  • 7 ounces, weight Radishes
  • 1 bunch Mint
  • 1 bunch Basil
  • 1 bunch Rocket
  • + 4 more ingredients
    • 4 Tablespoons Capers
    • 2 Tablespoons Olive Oil
    • 2 Tablespoons Red Wine Vinegar
    • 3-⅝ ounces, weight Feta Cheese

Cut potatoes in half and place in a large pot with cold water and plenty of salt. Bring to boil and cook until tender (I prefer potatoes cooked until the skins nearly fall off).
