Prickly Pear Lemonade


  • Ice cubes
  • 2 tablespoons sugar
  • 2 prickly pear fruit (about 10 oz. total)
  • ½ cup lemon juice

1. Cut ends from prickly pears. Cut a lengthwise slit through peel on each fruit. Pull back peel, scoop out fruit, and discard peel.2. Put prickly pear pulp, lemon juice, sugar, and 1 cup water in a blender or food processor. Whirl until smooth.3. Pour into ice-filled glasses.
