  • 2 tsp. white vinegar
  • 1/8 tsp. table salt
  • 2 cups cane syrup or light (grade A) molasses
  • 1-½ Tbs. unsalted butter; more for the slab or pan, the pot, and your hands
  • ½ tsp. baking soda

Butter a large marble slab or a jellyroll pan. If using a pan, set it on potholders or towels to protect your counter from heat. Have a parchment-lined baking sheet handy.
