Pulled Jackfruit Chili -

Ingredients

  • salt and pepper to taste
  • juice of ½ a lime
  • 2 teaspoons liquid smoke
  • 2 tablespoon nutritional yeast
  • 1 teaspoon dried thyme
  • ¼ to 1 teaspoon cayenne pepper (optional)
  • 2 teaspoons smoked paprika

    • 2 teaspoons ground cumin
    • 2 teaspoons ancho chili powder
    • 1 tablespoon coconut sugar (or brown sugar)
    • 1 tablespoon tomato paste
    • 1 tablespoon sriracha sauce
    • 2 tablespoons liquid aminos
    • 4 cups cooked kidney beans (or two 15-ounce cans, rinsed and drained)
    • one 15-ounce can of tomato sauce
    • two 15-ounce cans fire-roasted tomatoes
    • one 20-ounce can of jackfruit (packed in brine or water), rinsed and drained
    • 2 tablespoons diced Hatch green chiles (from a can)
    • ½ cup chopped red bell pepper
    • ½ cup chopped celery
    • ½ cup chopped carrots
    • 3 garlic cloves, minced
    • 1 small sweet onion, chopped
    • 1 tablespoon olive oil

Place the jackfruit in a colander in the sink. Use a fork or your fingers to tear the jackfruit into shreds. Set aside. Heat the olive oil in a large pot over medium heat.
