Pumpernickel Boule

Ingredients

  • 4 cups King Arthur Unbleached All-Purpose Flour
  • 1 cup King Arthur Unbleached White Whole Wheat Flour
  • ½ cup Pumpernickel Artisan Bread Flavor
  • 2 tablespoons vital wheat gluten, recommended to prevent a collapsed loaf
  • ½ teaspoon Deli Rye Flavor, optional, for more assertive rye flavor
  • 2 ¼ teaspoons salt
  • 2 teaspoons instant yeast
  • + 1 more ingredients
    • 2 cups lukewarm water

1) Combine all of the ingredients and mix and knead — by hand, mixer, or bread machine — until the dough is elastic and slightly sticky.
