Pumpkin and Golden Raisin Bread Pudding

Ingredients

  • 1 T unsalted butter
  • 2 T canola oil
  • 4 c medium-diced local pumpkin
  • 2 pinch nutmeg
  • 2 pinch ginger
  • 1 loaf dry multigrain bread, cut into 1-inch cubes
  • 2 c golden raisins
  • + 6 more ingredients
    • 2 ¾ c fat-free milk
    • 2 eggs, lightly beaten
    • 3 T Sugar in the Raw
    • 2 T Tupelo honey
    • 2 t vanilla extract
    • 1 t cinnamon

Preheat oven to 350F. Melt 1 1/2 teaspoons butter over medium heat until frothy. Stir in 1 tablespoon of the canola oil. Add one-half of the pumpkin and saute for 10 minutes or until evenly brown.
